This is a bacon sandwich. This costs $8. This is served at La Vara, which I deemed as of one New York’s best new restaurants in my year end column for Bloomberg News last December. Chef Alex Raij (Txikito, El Quinto Pino) serves food inspired by the traditions — if not necessarily the dietary restrictions — of Spain’s historical Sephardic and Moorish populations. And based on a recent visit, I’d say La Vara is one of the most exciting places to eat in New York right now.
The bacon is stewed in paprika and served inside a Sevillan pita. Should Raij ever decide to start selling this it out of a street cart, she’d make millions. We’re calling this one a STRONG BUY.
